¡El Chopped-o a la Ensalada-o!
This is a cabbage chopped salad that I made the other day. I just chopped up the following ingredients and mixed them together:
Cabbage, spinach, romaine lettuce, carrots, tomatoes, scallions, green pepper, and cucumber.
The dressing was a totally random concoction that I pulled out of my pantry: lemon juice, apple cider vinegar, grape seed oil (olive oil will work just as well), garlic powder, onion powder, turmeric, sea salt (and probably some other random spices that I had on hand). It is fun to play around and mix things together to make your own dressing. You always want to include some type of vinegar and oil, other than that you can add whatever you like. Just make sure not to get too carried away with strong spices like oregano and thyme...I made that mistake yesterday! If you mince fresh garlic and add lemon juice (freshly squeezed or all natural, not from concentrate-you can find this in the produce section) and let the garlic soak in the juice for a while it will extract a lot of the garlic flavor and then just add some oil and any other spices you like!
